Bistro Box, the cozy Great Barrington eatery known for its creative New England seafood dishes, has been named the BerkShares Business of the Month. Co-owners and co-chefs Birdie and Nick Joseph recently sat down for a quick chat during their busy prep hours, touching on local ingredients, community ties, and their deep affection for the region's coastal flavors.
The couple, who run the small spot with a tight crew, talked about how their menu shifts with the seasons. They lean heavily on produce from nearby farms and source fish directly from New England waters whenever possible. "There is something honest about cooking what comes from your own region," Birdie noted, while Nick added that their love for seafood started with childhood trips to the Massachusetts coast.
The BerkShares program, which supports local businesses and keeps money circulating within the community, highlighted Bistro Box for its commitment to sustainable sourcing and its role as a gathering place. The Josephs said they feel lucky to cook for a town that cares about where its food comes from. They also hinted at a few new dishes for the fall menu, including a haddock chowder and a roasted beet salad with local goat cheese.
